Today’s cheesecakes are brought to you courtesy of our friend Jon’s surprise birthday party! We knew that Jon loved cheesecake, so the mini cheesecakes were a given. During our house hunting together, we turned them onto our Madelines. So that became the other natural choice. Being that it was a surprise party, I knew that I would need to make enough to have leftovers so Jon and Lisa could enjoy after the party. We made a little over two batches with a bunch of variety. Peanut butter & milk chocolate chip, chocolate chip, caramel swirl, blueberry, raspberry & chocolate swirl, raspberry sauce with whole raspberries, chocolate swirl, and plain cheesecakes. This inspired the two different kinds of Madelines. We tried a new chocolate recipe along with the traditional kind. I was really pleased with the way they both turned out. We’ve got to make these again, soon!
