Another overage we saw in our CSA shares this year were beets. Lots and lots of beets. Different color beets, small and large beets. You name it, we had it. There’s only so much one can do with beets and only so many roasted beets you can add to salad. I needed to try my hand at borscht.
Like our fried green tomato recipe search, we found hundreds of variations. Unfortunately, I forgot to save the ones I used to create the final recipe we used. Sorry. But we really enjoyed our borscht and ended up canning quite a bit. We distributed a few jars out and heard all rave reviews. Here’s a nice shot of the borscht in the dutch oven.
